Vineyard & Origin – Western Cape
The grapes are sourced from Fairtrade-certified vineyards in the Swartland region of the Western Cape.
These trellised vineyards grow on oakleaf soils, providing excellent conditions for producing fresh and balanced Chardonnay. The vineyards are carefully managed with yields kept below 7 tons per hectare to ensure good fruit concentration and quality.
Winemaking
The grapes are hand-harvested early in the morning to maintain freshness and natural flavour.
After gentle crushing, only the free-run juice is used. The juice settles overnight before fermentation with selected yeast strains under controlled temperatures of 13–15°C.
The wine is then left on fine lees for several months, enhancing texture and complexity before bottling while maintaining its fresh, unwooded style.
