Vineyard & Origin – Western Cape
The grapes are sourced predominantly from Fairtrade-certified vineyards in the Swartland region of the Western Cape.
These 15 to 20-year-old trellised vineyards grow on sandy loam soils, providing ideal conditions for balanced vine growth and concentrated fruit.
The vineyards are carefully managed with yields maintained below 6 tons per hectare, ensuring quality and intensity in the grapes.
Winemaking
The grapes are hand-harvested and cold soaked overnight to enhance colour and flavour extraction.
Fermentation begins with selected yeast strains and takes place at controlled temperatures below 26°C, with regular pump-overs to extract colour and flavour.
Malolactic fermentation is completed in tank to soften the wine’s structure before it is transferred to older 225-liter oak barrels, where it matures for six months prior to bottling.
