Vineyard & Origin – Western Cape
The grapes are sourced from Fairtrade-certified vineyards in the Swartland region of the Western Cape.
These trellised vineyards grow on sandy loam soils, which provide excellent drainage and allow the vines to produce expressive fruit. The vineyards are carefully managed with yields kept below 8 tons per hectare, ensuring quality and balance.
Winemaking
The grapes are hand-harvested and undergo a 24-hour cold soak to enhance colour and flavour extraction.
Fermentation begins with selected yeast strains and takes place at controlled temperatures below 26°C. Malolactic fermentation is completed in tank to soften the wine and create a smooth mouthfeel.
The wine is then matured for six months in older French and American oak barrels (300L), adding subtle spice and complexity while allowing the fruit to remain the focus.
