Vineyard & Origin – Western Cape
The grapes are sourced from Fairtrade-certified vineyards in the Swartland region of the Western Cape.
These vineyards are trellised and planted on oakleaf soils, providing excellent growing conditions for healthy vines and expressive fruit. Yields are carefully managed to remain below 7 tons per hectare, ensuring good concentration and quality.
Winemaking
The grapes are hand-harvested early in the morning to preserve freshness and fruit character.
After crushing and destemming, the grapes are placed into drainers where the free-run juice is immediately separated and transferred to tanks for settling. The following day the juice is racked from the sediment and inoculated with selected yeast strains.
Fermentation takes place under controlled temperatures of 13–15°C, preserving the delicate fruit aromas and fresh character. After fermentation the wine is bottled early to maintain its vibrant freshness.
